In Season: Available year round The soybean is often called the miracle crop. The world’s foremost provider of protein and oil, the soybean is an extremely versatile food. It is part of the legume family and can be eaten whole after being boiled or roasted, or transformed into a number of other foods, including ice cream, burgers, milk, and nuts. The soybean originated in China and was brought to the United States in 1804 by sailors on a Yankee clipper ship, used as inexpensive ballast.
