Potatoes, Sweet

Potatoes, Sweet

In Season: Available year round The sweet potato is the sixth principal food crop in the world, with approximately 90 percent of production occurring in Asia. This vegetable is quite commonly referred to as a yam, but yams are actually typically grown in Africa, not the United States. The sweet potato was misnamed here during slave trade when the slaves were introduced to cooking with sweet potatoes. Although similar, sweet potatoes are much smaller than yams. The name stuck, however, and continues to confuse much of the nation. Just remember that the next time you buy a yam, chances are, you're probably about to enjoy a sweet potato.
