In Season: Typically available late spring through early autumn Consisting of about 90 percent water, the watermelon is aptly named. Related to cucumbers, pumpkins, and squash, the watermelon is botanically classified as a vegetable! With over 1,200 varieties grown in 96 countries, the watermelon enjoys much popularity. Although we typically only eat the flesh, both the seeds and the rind of a watermelon are edible.
