In Season: Primarily a spring crop, although cool summers allow for quality artichokes throughout the fall First introduced to the Salinas Valley in California in 1922, virtually all artichokes grown commercially in the United States are from the Golden State. The small town of Castroville, the self-proclaimed "Artichoke Center of the World," sits at the center of vast acres of artichoke fields and is home to the country's only artichoke processing plant, as well as the annual Artichoke Festival.
