For Onion Rings:

2 Each Large OSO Sweet Onions

3/4 Cup Flour

3 Tbsp Vegetable Oil

1 Cup Beer, Lager or Ale

1 Each Egg White

Canola Oil, for frying


For Aioli:

12 Each Garlic Cloves, gently cooked in Olive Oil

2 Cups Mayonnaise

2 Oz Chives, chopped

Salt and Pepper, to taste

For Onion Rings:

Heat oil to 375° F in a large pot. In a bowl, blend with flour with oil and beer. Whisk egg white until stiff and add to batter just prior to use. Slice onions into rings. Coat onion rings in batter and carefully add them to the hot oil. Cook for 3-4 minutes or until golden brown. Remove onion rings with slotted spoon and drain on paper towels.


For Aioli:

Roast the garlic in olive oil in a 300° F oven until soft, and then cover with foil. When cool, make a garlic paste and combine with the remaining ingredients.
