1 Each OSO Sweet Onions, thinly sliced
1 Cup Balsamic Vinegar, preferably aged, at least enough to cover onions
1 Lb French Green Beans, blanched
2 Oz Garlic, chopped
1 Each Red Tomato, sliced
8 Oz Proscuitto, thinly sliced
Balsamic-Marinated Sweet Onions with French Green Beans, Proscuitto and Tomatoes
Combine the onions and balsamic vinegar for at least 2 hours. Cook French beans in salted boiling water for 1-2 minutes or until crisp. Remove and place in ice bath. Combine garlic, tomatoes, French beans and onions in a bowl. Season with salt and pepper. Top with prosciutto.
